Sausage Apple Pie

1/2 lb. Blue & Gold Sausage
1/2 cup sliced celery
1/2 cup coarsely chopped onions
1 tsp. Ac'cent flavor enhancer (MSG, optional)
1 tsp. marjoram
1 cup walnut pieces
2 cups cubed apples
2 1/2 cups shredded cheddar cheese
2 deep dish frozen pie crust shells, thawed

Preheat oven to 400 degrees. Brown sausage in a medium skillet and drain well. Stir in celery, onion, Ac'cent, marjoram, walnuts, apples, and cheese. Pour into one pie crust. Cut large apple shape from remaining pie crust and place on top of filling. Cover pie top with foil and bake for 30 minutes. Remove foil and bake for an additional 15 minutes. Cool for 10 minutes before serving.

 

Sausage-Apple Balls

1 lb. Blue & Gold Sausage
2 cups biscuit mix
1 cup raisins, chopped
1 cup grated unpeeled apple
1/2 cup chopped walnuts
1/2 tsp. apple pie spice

Combine all ingredients, mixing well. Shape into 1-inch balls. Place on ungreased baking sheets; bake at 350 degrees for 20 minutes or until lightly browned. Yield: about 4 1/2 dozen.
 

Sausage Spice Cake

1 lb. Blue & Gold Sausage
2 cups sugar
2 eggs
1 cup raisins
1 cup nuts
1 tsp. cloves
1 tsp. cinnamon
1 tsp. nutmeg
1 tsp. allspice
1 tsp. baking powder
1 tsp. soda
1 cup buttermilk
1/2 tsp. salt
2 1/2 cups flour
Caramel frosting

Cover the cup of raisins with boiling water and set aside. Cream sugar and sausage together, beat in eggs. Sift together all dry ingredients. Add sugar and sausage mixture alternately with dry ingredients to buttermilk. Add drained raisins and nuts to mixture. Pour into greased tube pan and bake for 60 to 70 minutes at 350 degrees. Top with caramel frosting.
